It is getting warmer in Northeast Ohio. My son has been asking to make popsicles so I ordered these Zoku popsicle molds from Crate and Barrel.
My first foray into popsicle making did not turn out that great. I found a recipe for lime popsicles that I made but sections of the popsicle were like blocks of ice, and other sections were really tart lime. I kept looking and found a recipe for Fruit Pops on the Country Living website. I originally tried to avoid recipes with yogurt because I wanted something similar in texture to a store-bought popsicle, but when my lime popsicles did not work I thought maybe the yogurt will address my consistency problem.
These turned out really good! The flavor is fantastic. We had left over mix that did not fit in our molds and we just drank some of it like a smoothie. The consistency was better, but definitely a bit softer than what I was going for – but that was expected due to the yogurt.
Ingredients:
3 cups ripe fresh fruit (I used strawberry)
1/2 cup super fine sugar (I used regular granulated sugar)
3 tablespoons light corn syrup
1 tablespoon freshly squeezed lemon juice
2 cups vanilla yogurt
Directions:
1. In blender, puree the fruit, sugar, corn syrup and lemon juice until very smooth.
2. Add vanilla yogurt and blend until smooth.
3. Pour mixture into popsicle molds. Freeze at least 4 hours.
