Milk Bar Carrot Cake

Another Milk Bar recipe and this carrot cake was simply delicious! I wanted to make this for Easter, but due to the current quarantine situation we spent Easter at home without guests.

I planned ahead for this one, since I knew it would be time consuming based on my experience making the apple pie cake.

I made the liquid cheesecake and the milk crumbles on a Friday evening. I made the carrot cake and graham frosting on Saturday morning and assembled everything.  You have to freeze the cake, which I did overnight.  You also need to then let the cake defrost for 3 hours before serving, but mine needed much more time.

I recommend letting this sit for an extra day before eating.  I had a piece on Sunday and thought it was way too sweet.  But somehow on Monday it was perfect!
