Black Eyed Pea Salad

This is such a great side dish to go with grilled meats in the summer. This recipe is a take on a recipe that I can no longer find, so I had to wing it a bit. The original recipe was on a TV show called Secret Meat Business with an Australian chef, Adrian Richardson.

The ingredients below are an educated guess as I did not measure certain items. You can tweak this to your liking by adding more or less cilantro or lime.

Ingredients:

2 cans black eyed peas, drained and rinsed
1/2 red onion, diced
1/2 red pepper, diced
1/4 cup cilantro, chopped
1/4 cup fresh squeezed lime juice
2 Tablespoons good olive oil
Salt and Pepper

Directions:

Place black eyed peas, red onion, red pepper and cilantro in a bowl. Season with salt and pepper. Add lime juice and olive oil. Taste. If needed, add more salt, pepper, lime or olive oil.
